Raw, unfiltered local honey from Central New York.

I don’t heat it.
I don’t over-filter it.
And I don’t push my bees to produce more than they should.

The color and flavor change from jar to jar depending on what’s blooming. Some are light and floral. Some are darker and stronger. That’s how you know it hasn’t been standardized.

I don’t feed sugar—ever. If a colony needs support, they get honey. That’s what bees are meant to live on.

I also don’t use chemicals or treatments in my hives. I work with the bees, not against them. It’s a slower way to keep bees, but it keeps things clean—both in the hive and in the jar.

The way bees are kept matters. Strong, well-fed colonies working natural forage produce better honey. When the bees are healthy and not pushed beyond their limits, it shows up in what they make.

When I extract, the honey is kept below 90°F, which is about what you’d find inside a healthy hive. I only strain out wax and debris. Everything else stays.

So what you get is honey that still reflects the place it came from—local plants, changing seasons, and bees that were allowed to live more naturally.

No shortcuts. No substitutions.
